Method
 

Sear the chicken

Caramelize onions
  1. Melt butter in the same pan, then cook the thinly sliced onions over medium heat for 8-10 minutes until deeply caramelized.
Brown mushrooms and deglaze
  1. Add the sliced mushrooms and minced garlic, then cook for 4-5 minutes until golden; deglaze with Jack Daniel's whiskey or chicken broth and season with salt and pepper.
Smother and melt cheese
  1. Return the chicken to the pan, top each breast with the mushroom and onion mixture, then lay 2 slices of Monterey Jack over the top.
  2. Broil for 2-3 minutes until the cheese is melted, bubbly, and golden.
