Make the pumpkin cream
- Beat the softened cream cheese until smooth, then add the pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla and mix until fully combined.
- Fold in 3/4 of the whipped topping (Cool Whip) until the mixture is thick and uniform.
Layer and chill
- In a 9x13 dish, layer graham crackers to cover the bottom completely.
- Spread 1/3 of the pumpkin cream over the graham cracker layer, smoothing to the edges.
- Add another graham cracker layer, then top with the next 1/3 of pumpkin cream.
- Repeat with a final graham cracker layer, followed by the remaining 1/3 of pumpkin cream.
- Spread the remaining whipped topping over the final graham layer so the surface is evenly covered.
- Cover tightly and refrigerate overnight, so the grahams absorb moisture and soften into cake-like layers.
Serve
- Right before serving, dust the top with cinnamon and sprinkle crushed graham crackers for garnish.
Notes
For the smoothest slices, let the finished cake rest in the fridge long enough to fully set—overnight is best (up to 2 days refrigerated). Do not freeze, as the graham layer and whipped topping texture can change after thawing. For a lighter option, use low-fat cream cheese and a light whipped topping while keeping the chilling time the same for the best sliceable structure.
