  • 0.3333333333 cup pumpkin puree Choose plain pumpkin puree, not pumpkin pie filling.
  • 1 tbsp maple syrup For sweetness in the blended base.
  • 1 tsp pumpkin pie spice Use in the base and again for topping.
  • 0.5 tsp cinnamon Adds warmth alongside pumpkin pie spice.
  • 0.25 tsp vanilla extract Rounds out the pumpkin flavor.
Topping
  • 2 tbsp granola Keeps some crunch on one side of the bowl.
  • 1 tbsp pecans Chopped pecans work best for even topping.
  • 1 tsp maple syrup Drizzle over the bowl right before serving.
  • 0.0625 tsp pumpkin pie spice A light dust adds visual color and spice aroma.

Method
 

Blend the base
  1. Blend full-fat cottage cheese and pumpkin puree until completely smooth, scraping the sides as needed so no lumps remain. Add maple syrup, pumpkin pie spice, cinnamon, and vanilla extract and blend again until uniform.
  2. Pour the blended pumpkin cottage cheese into a bowl.
Top and serve
  1. Arrange granola and pecans on one side of the bowl so the creamy mixture stays visible on the other side. If needed, press the toppings lightly to help them adhere.
  2. Drizzle with maple syrup and dust with pumpkin pie spice for a final spiced finish. Serve immediately.

Notes

For the smoothest texture, use a high-powered blender or mixer and blend long enough that the pumpkin puree disappears completely. Store leftovers in the refrigerator up to 2 days, but the texture will be less fluffy; add fresh granola just before eating. Freezing is not recommended due to separation. For a dairy-light option, use part-skim cottage cheese and blend a bit longer to smooth it out.
