vanilla protein powder
  • 1 scoop (30 g) vanilla protein powder
pumpkin puree
  • 0.3333 cup pumpkin puree
Greek yogurt (full-fat)
  • 0.5 cup Greek yogurt (full-fat)
milk of choice
  • 0.75 cup milk of choice
maple syrup
  • 2 tbsp maple syrup

  • 1.5 tsp pumpkin pie spice

Method
 

Mix the jar base
  1. Add the rolled oats, vanilla protein powder, pumpkin puree, Greek yogurt, milk of choice, maple syrup, pumpkin pie spice, cinnamon, vanilla, and chia seeds to a mason jar or container. Stir until fully combined and no protein powder lumps remain.
Chill overnight
  1. Cover the jar and refrigerate overnight for at least 6 hours. The mixture should thicken and look creamy with chia throughout.
Serve
  1. In the morning, stir the oats and add a splash of milk if too thick. Look for a smooth, spoonable consistency before topping.
  2. Top with granola, drizzle with maple syrup, and sprinkle extra pumpkin pie spice. Serve immediately for the best crunchy-granola texture.

Notes

Pro tip: If your oats seem too thick after chilling, add milk 1–2 tbsp at a time until it’s spoonable. Store covered in the refrigerator for up to 3 days; it can be frozen only if you’re okay with softer oats after thawing (best not to freeze). For a higher-protein swap, use a higher-protein Greek yogurt or vanilla protein powder with more grams per scoop.
