Method
Make the apple filling
- Toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then place them in the slow cooker.
- Lay a double layer of paper towels under the lid to absorb excess moisture.
Make and add the oat topping
- Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt, then drizzle in melted butter and stir until the mixture forms clumps.
- Scatter the oat topping over the apples in the slow cooker and do not stir.
Cook and optionally crisp the top
- Cook on Low for 2.5-3 hours until the apples are tender and the topping is set.
- For a crispier topping, transfer to an oven-safe dish and broil for 3-4 minutes.
Serve
- Serve the apple crisp warm with vanilla ice cream.
Notes
For the best set, keep the lid on during the 2.5-3 hours on Low—lifting it can release steam and soften the crumble. Refrigerate leftovers in a covered container up to 4 days; reheat in short microwave bursts or a 300°F (150°C) oven until warmed. Freezing is not recommended because the topping texture softens after thawing. For a lighter option, swap half the butter in the topping with an equal amount of unsweetened applesauce (texture will be slightly less crisp).
