Slow cook the chicken
- Lightly season the chicken breasts with salt and black pepper, then place them in the crockpot.
- Whisk together the Italian dressing mix, cream of mushroom soup, and chicken broth, then pour the mixture over the chicken.
- Dot the cream cheese cubes over the top of the sauce so they start melting as the chicken cooks.
- Cook on low for 6 hours or on high for 3–4 hours, until the chicken is extremely tender.
Shred and finish
- Shred the chicken directly in the crockpot using two forks, then stir to combine everything with the sauce.
- Stir in the butter until the sauce turns silky and smooth.
Serve
- Serve the shredded chicken and sauce over the cooked angel hair pasta.
- Top with fresh parsley and parmesan before serving.
Notes
Pro tip: keep the crockpot covered while cooking so the sauce stays thick; if it looks too loose near the end, simmer on low uncovered for 10–15 minutes. Refrigerate leftovers in a sealed container for up to 4 days; freeze up to 2 months (freeze sauce and chicken separately from pasta if possible). For a lighter option, use reduced-fat cream cheese and reduced-fat cream of mushroom soup—texture will still be creamy.
