Ingredients
  

Chicken and seasoning
  • 4 boneless skinless chicken breasts
  • 1 Salt and black pepper to taste
Creamy sauce
  • 0.7 oz Italian dressing mix 1 packet
  • 10.5 oz cream of mushroom soup 1 can
  • 0.5 cup chicken broth
  • 8 oz cream cheese, cubed
  • 1 tbsp butter
Pasta and serving
  • 12 oz angel hair pasta, cooked
  • 1 Fresh parsley and parmesan for serving

Method
 

Slow cook the chicken
  1. Lightly season the chicken breasts with salt and black pepper, then place them in the crockpot.
  2. Whisk together the Italian dressing mix, cream of mushroom soup, and chicken broth, then pour the mixture over the chicken.
  3. Dot the cream cheese cubes over the top of the sauce so they start melting as the chicken cooks.
  4. Cook on low for 6 hours or on high for 3–4 hours, until the chicken is extremely tender.
Shred and finish
  1. Shred the chicken directly in the crockpot using two forks, then stir to combine everything with the sauce.
  2. Stir in the butter until the sauce turns silky and smooth.
Serve
  1. Serve the shredded chicken and sauce over the cooked angel hair pasta.
  2. Top with fresh parsley and parmesan before serving.

Notes

Pro tip: keep the crockpot covered while cooking so the sauce stays thick; if it looks too loose near the end, simmer on low uncovered for 10–15 minutes. Refrigerate leftovers in a sealed container for up to 4 days; freeze up to 2 months (freeze sauce and chicken separately from pasta if possible). For a lighter option, use reduced-fat cream cheese and reduced-fat cream of mushroom soup—texture will still be creamy.
