Ingredients
  

Chicken and seasoning
  • 2.5 lb boneless skinless chicken breasts Season lightly.

Italian cream sauce base
  • 1 packet (1 oz) dry Italian salad dressing mix Sprinkle and combine with soup and cream cheese.
  • 1 can (10.5 oz) cream of chicken soup Stir until smooth.
  • 8 oz cream cheese Cubed for faster melting; stir in fully after shredding.
  • 0.5 cup butter Sliced for even melting.
  • 0.25 cup dry white wine or chicken broth Pour over for flavor and moisture in the crockpot.
Serving and garnish
  • 12 oz angel hair pasta Cooked for serving; keep warm.
  • 1 Fresh parsley for garnish Chop and sprinkle over the top.

Method
 

Season and layer in the slow cooker
  1. Place the boneless skinless chicken breasts in the slow cooker and season lightly with salt and pepper.
  2. Cover the chicken evenly with the dry Italian salad dressing mix, cream of chicken soup, cubed cream cheese, sliced butter, and pour over the dry white wine or chicken broth.
Slow-cook until fall-apart tender
  1. Cook on LOW for 6-7 hours until the chicken is fall-apart tender, with the sauce thickening around it.
  2. Or cook on HIGH for 3-4 hours until fall-apart tender, keeping the lid closed to maintain heat.
Shred and finish the sauce
  1. Shred the chicken in the sauce using two forks so the pieces absorb the buttery cream base.
  2. Stir until the cream cheese is fully incorporated and the sauce turns rich, creamy, and glossy.
  3. Taste and adjust seasoning so the final sauce is well balanced.
Serve
  1. Serve the shredded angel chicken over the cooked angel hair pasta.
  2. Garnish with fresh parsley for garnish and add a light crack of pepper if desired.

Pro tip: for the glossiest sauce, shred thoroughly and stir until the cream cheese disappears—stop once the mixture looks smooth and coats the chicken. Store leftovers in the fridge up to 3 days; freeze in a sealed container up to 2 months. For a lighter option, use reduced-fat cream cheese and reduced-sodium cream of chicken soup.
