Ingredients
  

Chicken breasts
  • 4 boneless chicken breasts Pounded thin for even cooking.
Avocados
  • 2 ripe avocados Slice for layering on the sandwich.
Bacon
  • 8 bacon Cooked crispy; use 8 strips total.
Swiss cheese
  • 8 Swiss cheese Use 8 slices for 4 sandwiches.
Bread
  • 8 sourdough or ciabatta bread Sliced into 8 bread slices total.
Butter
  • 2 tbsp butter For buttering the outside of the bread.
Olive oil
  • 1 tbsp olive oil For cooking the chicken.
Garlic powder
  • 1 tsp garlic powder For seasoning the chicken.
Salt and black pepper
  • 0.5 tsp Salt and black pepper Season to taste for the chicken.
Dijon mustard
  • 1 tbsp Dijon mustard Spreads on the unbuttered side of half the bread slices.
Mayonnaise
  • 1 tbsp mayonnaise Spreads on the unbuttered side of the other half of bread slices.

Method
 

Cook and season the chicken
  1. Season the boneless chicken breasts with garlic powder, salt and black pepper, then cook them in olive oil over medium-high heat for 5–6 minutes per side until cooked through. Flip once during cooking and keep the heat at a steady medium-high for browning.
Prep bread and spreads
  1. Butter the outside of all bread slices with butter. Keep the unbuttered sides ready for spreading so the melt layers seal well.
Assemble the melts
  1. Spread Dijon mustard on the unbuttered side of half the bread slices and mayonnaise on the unbuttered side of the other half. Use an even layer so the sandwich stays flavorful at every bite.
Layer fillings and close sandwiches
  1. Layer Swiss cheese, cooked crispy bacon, avocado slices, and the cooked chicken on the Dijon side, then close the sandwich with the buttered-side out. Press lightly so the cheese starts to melt into the filling.
Toast and melt
  1. Toast in a skillet over medium heat for 3–4 minutes per side until golden and the cheese is fully melted. Watch for a golden crust and visible cheese melting at the edges before flipping.
Serve
  1. Slice diagonally and serve immediately. The interior should look gooey with a cheese pull and creamy avocado.

For best juiciness, pound the chicken thin and avoid overcooking—pull it when the center is just done so it stays tender after toasting. Store leftovers in the refrigerator up to 3 days; reheat in a skillet over medium to restore crispness. Freezing: no, the bread can get soft and the avocado texture can change. Swap option: use avocado slices as written but choose lactose-free Swiss if you need a dairy-light version (still melt-friendly).
