Cook the potatoes
- Heat a Blackstone griddle to medium-high and add 2 tablespoons oil.
- Season potato halves with salt, pepper, and paprika, then cook for 12-15 minutes until golden and tender.
- Move the potatoes to the side and add remaining oil to the griddle.
Cook the steak
- Season steak cubes with salt and pepper and cook for 6-8 minutes, turning occasionally, until desired doneness.
Toss in garlic butter and serve
- Add butter and garlic to the griddle and toss steak and potatoes in the garlic butter.
- Garnish with fresh parsley and serve immediately.
Notes
For extra browning, keep the potatoes cut-side down for most of the 12-15 minutes, and avoid stirring during the first few minutes. Store leftovers in the refrigerator up to 3 days. Freezing is not recommended because steak texture changes and potatoes can become mealy. For a lower-sodium option, use less salt and rely on black pepper and paprika for flavor.
