corn tortillas
  • 12 corn tortillas
red enchilada sauce
  • 2 can (10 oz each) red enchilada sauce
mexican cheese blend
  • 2 cup Mexican cheese blend
sour cream
  • sour cream
cilantro
  • cilantro
jalapeños
  • jalapeños

Method
 

Preheat and prepare the dish
  1. Preheat the oven to 375°F and spread 1/2 cup red enchilada sauce in the bottom of a 9x13 dish.
Cook the beef filling
  1. Brown the ground beef with the diced onion over medium-high heat, then drain off excess fat.
  2. Add the minced garlic, taco seasoning, and water, then simmer for 5 minutes.
Warm tortillas
  1. Wrap the corn tortillas in a damp paper towel and microwave for 1 minute to make them pliable.
Assemble the enchiladas
  1. Fill each tortilla with the beef mixture and a sprinkle of Mexican cheese blend, then roll up and place seam-side down in the dish.
  2. Pour the remaining red enchilada sauce evenly over the rolled enchiladas and top with the remaining Mexican cheese blend.
Bake and serve
  1. Bake uncovered for 20–25 minutes at 375°F until the cheese is bubbly.
  2. Serve topped with sour cream, cilantro, and jalapeños.

Notes

Pro tip: drain the beef well so the filling isn’t watery before rolling. Refrigerate leftovers in a sealed container up to 3 days; reheat at 350°F until hot and bubbly. Freeze yes—freeze baked enchiladas (cool completely first) up to 2 months, thaw in the fridge overnight, then reheat. For a lighter option, use reduced-fat Mexican cheese blend and swap the taco seasoning for one with no added sugar if desired.
