Marinate the chicken
- In a bowl, season the chicken with 2 tbsp Jamaican curry powder, all-purpose seasoning, garlic powder, onion powder, salt, and black pepper, then marinate for 1 hour covered in the refrigerator until coated.
- Seasoning should look even and slightly dusty on the surface so the curry flavor penetrates as it sits.
Brown and build the curry base
- Heat the vegetable oil in a heavy pot over high heat and brown the chicken in batches on all sides until deeply golden, about 3–5 minutes per batch, then remove to a plate.
- In the same pot, toast the remaining 1 tbsp Jamaican curry powder in the oil for 1 minute, stirring constantly until fragrant.
- Add the sliced onion and cook for 4 minutes, stirring, until softened and starting to caramelize at the edges.
- Add the minced garlic, the whole Scotch bonnet, and fresh thyme, stirring for 30–60 seconds until the garlic is fragrant.
Simmer until falling-off-the-bone
- Return the browned chicken to the pot, then add chicken broth and potato cubes; bring to a boil over high heat.
- Once boiling, reduce heat to a gentle simmer, cover, and simmer for 35–40 minutes until the chicken is falling off the bone and the sauce is thick and glossy.
- Remove the Scotch bonnet, taste, and adjust seasoning with salt and black pepper, then serve immediately over cooked rice and peas.
Notes
For the deepest color, brown the chicken in batches so the pot stays hot and the surface can turn deeply golden before simmering. Refrigerate leftovers up to 3 days; freeze the curry without fresh thyme garnish for up to 3 months, then reheat until bubbling. For a lighter option, use skinless chicken and reduce the oil to 2 tbsp while keeping the browning steps the same.
